I like food. I also like to cook. Not quite as much as I like food but hey, there aren't many things in life that I do like as much as food.
Please be aware that I am not a chef, nor am I a culinary genius. I will definitely not be entering master chef or will I be challenging Raymond Blanc to a cook off any time soon. I am however, a fan of simple food and easy and tasty recipes.
Pasta makes me happy. Bacon makes me very happy. And garlic, well ... that is a whole other level of happiness right there. My dinner this evening included all of those things plus copious amounts of mushrooms ... heaven in a very large heart shaped bowl.
The pasta recipe I am sharing today is so simple and so unbelievably yummy. It is one of my all time favourite meals and is a firm winner with the fussy mister and little lady too. It can easily be adapted to your tastes or mood by throwing in different herbs, spices or whatever you have in the fridge. As long as you have pasta and crème fraiche you're set.
Here's what I use -
Pasta (Tagliatelle for me & gluten free Fusilli for Izzie)
Garlic infused Olive Oil
Crème Fraiche
Parsley (fresh is best but dried is fine)
Black pepper
Unsmoked bacon (fat removed)
Mushrooms (any type will do but I used closed cup)
Start by putting your pasta on to cook.
Heat up a teaspoon of garlic infused oil in a large pan over a medium heat. You can use regular olive oil but I find that the garlic oil gives the mushrooms and bacon a great flavour. If you do chose to substitute the garlic oil I would recommend adding either fresh or granulated garlic.
Throw your chopped up mushrooms and diced bacon into the pan and cook through.
Once cooked stir in a generous amount of Crème Fraiche.
Put the cooked pasta into the pan of creamy mushroom and bacon sauce and stir to coat.
Dish up. Sprinkle with chopped Parsley or even grated Parmesan and season with black pepper. Chow down.
I baked myself a loaf of wholemeal bread today and so decided to attempt making some cheesy garlic bread to go with my pasta and it was AMAZING! I didn't have a recipe so I just put 2 garlic cloves, a teaspoon of parsley, about 30g of extra mature cheddar cheese and a good ol' dollop of butter (probably about 3 tablespoons) into the food processor and whizzed it up, slathered it onto a chunk of my freshly baked crusty bread and popped it into the oven for about 5 minutes. It was so delicious and easy. Plus I have a ton of my cheesy garlic butter left so can freeze it ready for when I really fancy some garlicy cheesy carby goodness. Which is always!
